Roasted Cherry Tomatoes for the easy and tasty summer win! When you’ve got loads of tomatoes to use up, these roasted tomatoes with fresh herbs is exactly what you want to make. You can serve them as a side dish, a salad or a topping for avocado toast…delish!

Ingredients and Substitutions

Wholesome ingredients: tomatoes, herbs, onion, garlaic.
  • Tomatoes: Cherry tomatoes, grape tomatoes or pear tomatoes are easy to roast (no chopping involved) and cooking enhances their nutritional content.
  • Red onion
  • Fresh oregano and basil
  • Garlic cloves
  • Extra Virgin olive oil
  • Spices: sea salt, black pepper, crushed red pepper.

Nutritional benefits of Tomatoes

Tomatoes are both nutritious and delicious. They contain fiber, potassium, vitamin C and choline which are proven to support heart health. Additionally, tomatoes are rich in Vitamin K which benefits healthy hair and skin; they are rich in antioxidants, have anti-inflammatory properties and promote a healthy ratio of calcium in the body which supports bone health.

Roasting tomatoes brings out their flavor and natural sweetness, but it also makes them healthier for you. Research has shown that cooking the tomatoes increases the levels of lycopene—a powerful antioxidant—-making it available to us to absorb along with healthy fats like olive oil.

Is it better to buy organic tomatoes?

YES.  Tomatoes are on the Environmental Working Group’s “Dirty Dozen” list….their annual ranking of the fruits and vegetables with the most pesticides. If you can’t afford or don’t have access to all organic produce, the dirty dozen is a good place to focus your efforts on.  I look for organic tomatoes at my local farmers market. Alternately, grow your own.  Tomatoes can even be grown in containers on a patio or deck.  Bonus if you grow your own herbs too. Not only will you save a ton of money, but you’ll always have them at your fingertips!

How to make them

Preheat oven to 425 and get out a large rimmed baking tray.

Smashed Garlic Cloves

Smash the garlic cloves with the side of your knife and then roughly chop

Tomatoes, onions, garlic plus herbs on a baking tray

Spread tomatoes out on sheet pan. Thinly slice onion and fresh herbs, and spread onto pan along with the chopped garlic. Drizzle on olive oil, sprinkle salt and pepper over everything and mix well.

Roast for 15 minutes, toss and return to oven for another 10 minutes or until they begin to blister and burst.

Transfer tomatoes and their juices to a bowl. Crush a few tomatoes with the back of a spoon against the side of the bowl if desired for a saucier tomato side dish. Serve roasted cherry tomatoes warm or at room temperature.

Top 10 things to do with roasted cherry tomatoes?

  1. Spoon onto avocado toast.
  2. Use it like salsa and serve with crudites or tortillas.
  3. Bruschetta tastes better with roasted tomatoes.
  4. Quiche: add them to a quiche along with other roasted veggies.
  5. Use as a sauce for spiralized zucchini noodles.
  6. Pizza….the best topping, EVER.
  7. Make shakshuka: the perfect nest for baked eggs.
  8. Puree in the blender to make SAUCE….for pasta, rice, baked tofu, roasted veggies, whatever.
  9. Serve on top of polenta.
  10. My favorite: grab a spoon and dig in! The ultimate roasted tomato snack.

It’s starting to taste and smell and lot like summer around here….I’ve got roasted cherry tomatoes with fresh herbs in the oven (AGAIN) and nobody’s complaining.  Tell me in the comments how you use yours.

Roasted Cherry Tomatoes with Fresh Herbs

Ingredients
  

  • 2 pints cherry tomatoes approximately 5 cups
  • ½ red onion thinly sliced
  • 2 tablespoon fresh basil leaves
  • 1 tablespoon fresh oregano leaves
  • 3 cloves garlic smashed and chopped
  • 2 tablespoon olive oil
  • ¼ teaspoon coarse sea salt
  • ¼ teaspoon black pepper

Instructions
 

  • Preheat oven to 425
  • Place tomatoes, onion, herbs and garlic on a rimmed baking sheet
  • Drizzle with oil, sprinkle with salt and pepper and toss well.
  • Roast for 15 minutes, toss and continue to roast for another 10 minutes until tomatoes are blistered and some have burst.
  • Let cool slightly and transfer to a bowl. Crush a few of the tomatoes with the back of a spoon on the side of the bowl until you reach your preferred consistency.
  • Serve warm or at room temperature.
  • Store roasted tomatoes in an airtight container in the refrigerator for up to 5 days. They will taste best when brought back to room temperature before serving.

Notes

Fresh herbs:  Any combination of basil, oregano, thyme or parsley will taste great.

    I just bought cherry tomatoes today, and I think I might be able to snip some fresh herbs from the garden. This will make the perfect side dish to the roast beef on the bbq this weekend.

    We always have cherry tomatoes at our house. They are a staple because I can make so much with them. Not only are they good in salads but cooked in other dishes. I love the way you roast the cherry tomatoes. I haven’t added onions to the roasting process – what a great idea. I’ll have to follow your method next time.

    I’d love those roasted tomatoes on a grilled pizza, yum! Cherry tomatoes make such a great snack to have around the house. Some of my favorite little tomatoes are the yellow pear tomatoes from my mom’s garden, they would taste awesome in this recipe!

    Roasted tomatoes are one of my all-time favorite summer dishes, and these ones look delicious! I would eat them by the spoonful like you suggest, but I’m also tempted to use them to top some avocado toast. That just sounds like the ultimate summer brunch dish. Yum!

    Roasting tomatoes brings out so much great flavor in them! I love that these can be added to elevate pasta dishes, salads, and other dishes, but also just be eaten and enjoyed on their own. Can’t wait until my summer tomato crop is ready so I can enjoy these more often!

    I love this recipe! Such a great way to use up the abundance of tomatoes from the garden. Something like this is great on toast, or with grilled chicken, tossed into a salad… so many options! Definitely loving the pizza idea, too 🙂 Gotta try them all!

    Fresh tomatoes are, hands down, my FAVORITE part of summer. I buy little heirloom cherry tomatoes by the basketful at the farm near my house. I love your instructions for simple roasting, and I can practically taste the beautifully concentrated flavor. Your suggestion to top them with polenta is one of my favorite things to do. This will be a must for my next trip to the farm!
