Creamy Tangy Vegan Pistachio Dressing

I’m having a moment with pistachios and this Creamy Tangy Vegan Pistachio Dressing is top of my current obsession list of recipes to make with pistachios. It’s just so easy to make—literally 5 minutes (probably less) with just 8 simple ingredients and so good, we’re literally drizzling it on EVERYTHING!

Delicious ways to use this dressing

  • The obvious is on a simple green salad.
  • My favorite is a Cucumber & Edamame Vegan Kale Salad
  • Wraps and Sandwiches
  • As a dip with crudites.
  • Drizzle on some vegetables like this extraordinary roasted broccoli recipe.
  • Perfect atop a quinoa veggie burger
  • Fabulously flavorful drizzled on a spring roll bowl.

Ingredient Notes

Labeled ingredients for pistachio dressing: pistachios, water, vinegar, garlic, olive oil, honey, parsley, salt and pepper.
  • Pistachios: Star of the show and my current obsession…I’m using them in other recipes too: sweet and spicy carrot ribbons salad, green bean salad with shallots, celery salad with chickpeas and raisins.
  • Parsley: fresh herbs make all the difference when you want a vibrant dressing!
  • Vinegar: I used rice wine vinegar, but you could also use fresh lime juice for that tangy zing that makes this homemade dressing sing.
  • Olive oil: for an oil free pistachio dressing, replace the oil with half water and half lime juice.
  • Garlic: I use a microplane to grate the garlic straight into the blender.

Zest the garlic right over the blender cup. Add the remaining ingredients.

Blend until thick and creamy.

  • Use this creamy vegan dressing for salads, wraps, sandwiches, grain bowls, or as a dip for crudites.
  • Use more vinegar or lime juice for extra zippy flavor.
  • A pinch of cayenne pepper or wasabi powder turns this into a spicy pistachio dressing.

Creamy Vegan Pistachio Dressing

Creamy, Dreamy Homemade Pistachio Dressing is Vibrant and Delicious! You'll love how easy this vegan and gluten-free dressing is to make and you'll want to put it on ALL THE THINGS! Fabulous as a salad dressing, or a dip for crudites! Slather it onto your sandwiches and wraps and drizzle it on your grain bowls.

Equipment

  • Nutribullet Personal Blender
  • microplane zester
  • 13-oz. glass bottles

Ingredients
  

  • ¼ cup pistachios raw
  • ¼ cup parsley leaves
  • ¼ cup water
  • ¼ cup olive oil
  • 2 tablespoon rice wine vinegar unseasoned
  • 1 tablespoon honey
  • 2 cloves garlic
  • ½ teaspoon sea salt
  • ¼ teaspoon white pepper

Instructions
 

  • Place water, oil, vinegar, honey, salt, pepper, pistachios and parsley in the cup of a blender. Grate the garlic right over container and then blend until creamy.
  • Taste for seasoning: add a splash of lime juice or more vinegar for tang. A pinch of wasabi powder or cayenne pepper for some heat or another squirt of honey or maple syrup for a sweeter dressing.
  • Check for consistency. If you want a thinner dressing, add more water 1 tablespoon at a time, blending after each addition.

Notes

Storage:  store in a glass bottle in your fridge for up to 2 weeks. 
Consistency:  Dressing will thicken as it sits and after it chills in the fridge. Add just a tablespoon water at a time if you’d like to thin it out and share the bottle vigorously to incorporate before assessing if you’d like any additional liquid.
