Place water, oil, vinegar, honey, salt, pepper, pistachios and parsley in the cup of a blender. Grate the garlic right over container and then blend until creamy.
Taste for seasoning: add a splash of lime juice or more vinegar for tang. A pinch of wasabi powder or cayenne pepper for some heat or another squirt of honey or maple syrup for a sweeter dressing.
Check for consistency. If you want a thinner dressing, add more water 1 tablespoon at a time, blending after each addition.
Notes
Storage: store in a glass bottle in your fridge for up to 2 weeks. Consistency: Dressing will thicken as it sits and after it chills in the fridge. Add just a tablespoon water at a time if you'd like to thin it out and share the bottle vigorously to incorporate before assessing if you'd like any additional liquid.
