How to pick and store Asparagus
- Look for firm, plump stalks in a rich green color that gradually fades as it gets to the end.
- Fresh asparagus won’t have much smell…if there is an odor, then they are past their prime. They also should be firm to the touch without any slimy or dark spots.
- Thicker stalks will be more tender and have more fiber, but thinner stalks will take less time to cook. Buy what looks freshest!
- When you get home with your fresh asparagus, keep the rubber bands on to hold them together. Trim off about an inch from the bottom. Place in a shallow dish with 1-2 inches water and store in the refrigerator, uncovered. They’ll last a few extra days this way.

Ingredients and Substitutions
- Asparagus: Ok…this is the star of the show! Broccolini would be a good substitute. Most veggies easily fall through the cracks, so if you don’t have asparagus, consider making grilled vegetable skewers instead.
- Mustard sauce: dijon mustard, olive oil, sea salt, lemon juice.
How to Grill Asparagus
- Preheat your grill and make sure it’s clean.
- Trim any woody ends off asparagus and lay flat on a baking sheet or cutting board.
- Drizzle on 1-2 teaspoons olive oil and use your hands to roll the asparagus around until they’re all barely coated, so they won’t stick to the grill.
- Asparagus are easy to grill, but make sure they are perpendicular to the grate so they don’t fall through!
- They’ll take 2-4 minutes to get grill marks, depending on thickness…then use tongs to roll around to the other side and continue to cook for another 2-3 minutes until desired degree of done. I like mine crisp and al dente so the total cooking time is usually 4 minutes.
Easy Mustard Sauce for Grilled Asparagus
Just a drizzle of this delicious mustard sauce is all you need to elevate your grilled asparagus. Just whisk the mustard, olive oil, lemon juice, salt and pepper with just a teaspoon of water. Bam…done and ready!

Grilled Asparagus with Mustard Drizzle
Ingredients
- 2 bunches asparagus
- 1 teaspoon olive oil
Drizzle:
- ½ teaspoon Dijon mustard
- ¼ teaspoon lemon juice
- ½ teaspoon olive oil
- 1 teaspoon water
- pinch of sea salt
- freshly ground black pepper
Instructions
- Preheat grill to medium/high.
- Prepare asparagus: wash and trim, toss in olive oil so they won’t stick to the grill.
- Prepare Mustard Drizzle: whisk all ingredients together and set aside until asparagus are ready.
- Grill: Carefully place oiled asparagus on the grill so they are perpendicular to the grill slats. Grill for 4 minutes and then gently roll to the other side so they don’t fall through. Grill another 4 minutes, or until desired tenderness.
- Place grilled asparagus on a serving platter and drizzle with mustard sauce. Serve warm or at room temp.
- Make a double batch because these will stay good in the fridge for up to a week and they are fantastic cold as left overs.
