Grilled Asparagus with Mustard Drizzle

I love these longer warm days when we can spend more time outside. There’s something so peaceful about breathing in the fresh air and being surrounded by nature’s beauty. Spending more time with my dog at the beach or the park is often the best antidote to a hectic day. A simple dinner spent with family and friends is another great way to unwind. Grilled asparagus with mustard drizzle is one way to get that nutritious dinner on the table without much fuss.

Simple and Seasonal

Our bodies are naturally in tune with the changing of the seasons, craving more of what’s seasonally available. When we eat food that does not grow in the season or climate we live in, it sends mixed messages to the body. When we eat foods sourced closer to home, it can help us feel more balanced, healthy and connected. The change of seasons gives us a reminder and an opportunity to get out of the meal rut we’ve been in and add in a few favorites we haven’t seen in our local grocery or farmers markets in awhile.  Eating locally grown, seasonal produce also tastes better because it is picked at the peak of ripeness and is the most flavorful.

Asparagus is one of my favorite vegetables, and one of the few that EVERYONE in my family enjoys. They start to come in season here in the Northeast sometime in April and we eat them in many different ways all through the spring and summer.

Whisk together a simple mustard drizzle.
Although grilled asparagus is delicious on it’s own, a simple mustard sauce enhances the flavor.

I try to keep our meals simple this time of year, so I can spend more time enjoying the activities that I missed so much during the winter….but simple doesn’t have to mean boring or lacking nutrition.

These simply grilled asparagus get a big boost of flavor from a drizzle made from basic ingredients found in most kitchens. There aren’t any hard to find ingredients, any time consuming preparations, or many extra dishes to wash…..which will give you more time to spend with family and friends doing what you love.

Yield: Serves 4-6

Grilled Asparagus with Mustard Drizzle

Grilled asparagus drizzled with mustard vinaigrette.

Grilled asparagus are super simple, with a delicious mustard drizzle. Easy vegan recipe for BBQ and potlucks.

Prep Time 5 minutes
Cook Time 4 minutes
Total Time 9 minutes

Ingredients

  • 2 bunches asparagus
  • 1 teaspoon olive oil

Drizzle:

  • ½ teaspoon Dijon mustard
  • ¼ teaspoon lemon juice
  • ½ teaspoon olive oil
  • 1 teaspoon water
  • pinch of sea salt
  • freshly ground black pepper

Instructions

  1. Preheat grill to medium/high.
  2. Prepare asparagus: wash and trim, toss in olive oil so they won’t stick to the grill.
  3. Prepare Mustard Drizzle: whisk all ingredients together and set aside until asparagus are ready.
  4. Grill: Carefully place oiled asparagus on the grill so they are perpendicular to the grill slats. Grill for 4 minutes and then gently roll to the other side so they don’t fall through. Grill another 4 minutes, or until desired tenderness.
  5. Place grilled asparagus on a serving platter and drizzle with mustard sauce. Serve warm or at room temp.
  6. Make a double batch because these will stay good in the fridge for up to a week and they are fantastic cold as left overs.

Notes

You may want to get an extra bunch of asparagus as they are tempting to eat straight from the grill.
