I love soup season…fall soups are warm and cozy, nourishing and satisfying….and so much fun to make!
Does soup season ever really end? I think not…but as the weather starts to turn cooler in autumn, I definitely look forward to fall soups and stews. Hearty and healthy soup recipes are perfect if you’re having soup for dinner, my favorite fall and winter tradition.
I love soup season! Oh, did I mention that already? I can’t help it. I love fall too…you know, crunching the leaves, wearing scarves and sweaters….but my favorite part of fall is having a pot of soup of the stove. Fall soups are perfect for the transition from summer to winter:

It’s easy to make homemade veggie broth to use as a base for your favorite soup. I make a huge stockpot and freeze it in one cup silicone ice cube trays which makes it easy to defrost just the amount I need. Or, I use wide mouth mason jars to freeze a quart at a time. Remember, the veggie stock will expand a bit when it freezes, so be sure to leave a bit of space on the top of the mason jar before sealing and freezing.
Creamy Vegan Soups
There are so many ways to thicken up a soup without using cream. For a dairy-free creamy soup, you can use nuts, beans, tofu, tahini, miso or even veggies like cauliflower or parsnips to thicken the broth. Although you can puree soup using a traditional blender, if you’re going to be making creamy soups often, I highly recommend an immersion blender. You’ll also use it to make salad dressings and sauces….with far less mess and fuss than transferring everything to a blender or food processor.
A dutch oven is great to make soup in…and also can go into the fridge to store it. I like the way it evenly conducts heat so you can simmer without food burning on the bottom.
This simple butternut squash soup recipe with roasted and spiced pepitas tastes incredible. Make some extra pepitas to have on hand to sprinkle on salads…or just for snacking on, they’re so tasty.
