In a large bowl, using a fork, mix together all ingredients.
Generously scoop batter into waffle iron. How much will depend on the style/size of YOUR waffle Iron. I used about ½ cup batter for each waffle in MY waffle iron.

If you're making these post Thanksgiving and you have plenty of leftover stuffing to use up, replace up to half the potatoes with stuffing. For each 1 cup of leftovers, use 1 egg and whatever seasonings/herbs/veggies you like. OPTIONAL ADD INS: chopped red peppers, black beans, cilantro, jalapenos. OPTIONAL TOPPINGS: avocado, salsa, chopped veggies, beans, sriracha, herbs, jalapenos. Any leftover waffles can be refrigerated or frozen and reheated in the toaster.
