Vegan Shepherd's Pie

Vegan Shepherd's Pie with Sweet Potato Mash is so delicious and satisfying, nobody will miss the meat!  Vegan comfort food at it's finest.


Bake Sweet Potatoes


Roast potatoes in 350 oven. Cut in half and scoop out flesh.

Make Mash Topping


Add salt, pepper and olive oil to sweet potato flesh and puree with immersion blender or use a potato masher until smooth and creamy.

Make Filling


Saute onions and mushrooms in a heavy skillet until beginning to caramelize.

More Veggies


Add the carrots, celery, parsnips along with the minced garlic, fresh and dried spices.  Stir while cooking.

Veggie Filling


Deglaze pan with wine, add tomato paste and veggie broth and cook until veggies are tender and liquid has reduced.

Spread topping


Scoop mashed sweet potatoes on top and then spread evenly. 



Sprinkle with fresh herbs and bake in preheated 375 oven for 30 minutes, until bubbly and golden.
