INGREDIENTS

Fresh Green Beans Pistachios olive oil shallot lemon garlic dijon mustard sea salt crushed red pepper

Trim Beans

Wash beans and trim off stems.

Blanch Green Beans

Place green beans in salted boiling water.  Cook for 2 minutes and immediately transfer to an ice bath.

Prep Vinaigrette

Thinly slice shallot. Grate garlic and zest lemon.

Saute

Saute shallots in olive oil and then add crushed red pepper, grated garlic and lemon zest.

Vinaigrette

Add mustard and lemon juice and whisk until emulsified.

Mix

Turn off heat and add in blanched green beans. Toss to thoroughly coat beans with vinaigrette.

Garnish

Transfer to a platter and sprinkle with toasted pistachios.
