Dice onion, zucchini and red pepper. Mince jalapenos and garlic.
Heat large dutch oven over medium heat and saute onions in veggie broth until translucent. Add zucchini, peppers, jalapenos and spices.
Cozy spices like chili powder, cumin, oregano, cayenne pepper and sea salt make this chili super tasty.
Mix in minced garlic and green chilis and then stir in remaining ingredients like canned tomatoes, beans, dry lentils and frozen corn.
Add one cup of veggie broth or water. Mix well and simmer uncovered for 30 minutes.
Garnish with lime wedges, chunks of avocado, fresh cilantro, sliced jalapenos, or green onions.
