Halve zucchini lengthwise and scoop out the center.
Preheat oven to 375. Spread marinara on the bottom of baking pan and place scooped out zucchini on top. Bake while prepping filling.
Saute onions and mushrooms with spices.
Add in diced bell peppers and roughly chopped zucchini pulp. Cook and then add in ground walnuts and tamari.
Scoop filling into par-baked, scooped out zucchini boats.
Spoon marinara on top, then sprinkle on fresh herbs and nutritional yeast.
Bake at 375 for 30 minutes until bubbly and tender.
Serve warm with a simple salad.
