Zucchini Onion Mushrooms Seasoning Bell pepper Walnuts Tamari Marinara sauce Nutritional yeast

Prep the zucchini

Halve zucchini lengthwise and scoop out the center.

Par bake Zucchini Boats

Preheat oven to 375. Spread marinara on the bottom of baking pan and place scooped out zucchini on top. Bake while prepping filling.

Saute

Saute onions and mushrooms with spices.

Make filling

Add in diced bell peppers and roughly chopped zucchini pulp. Cook and then add in ground walnuts and tamari.

Fill zucchini

Scoop filling into par-baked, scooped out zucchini boats.

Spoon marinara on top, then sprinkle on fresh herbs and nutritional yeast.
