Preheat oven to 350. Brush 1 Tablespoon olive oil on bottom and sides of 9x13 baking dish. Do not skip this step if you want a crispy kugel.
Use a potato shredder for the onions. Do this right over the mixing bowl to catch all the juices.
Use a whisk to beat air into the eggs. Then add the oil and whisk some more.
Add the eggs to the onions and mix well. Then add the fresh herbs and dried spices and mix until well incorporated.
Mix well until the cauliflower is fully enveloped by the egg mixture.
Pour into preheated pan and decorate the top with some of the larger pieces of cauliflower.
Bake for 1 hour 15 minutes. Cut into squares.
