Use a food processor or box grater to shred the onion.
Whisk the eggs and then mix in the grated onions.
Scrub the potatoes, no need to peel. But into quarters lengthwise and then shred.
Add shredded potatoes and matzo meal to the bowl with egg mixture and mix until well combined.
Scoop out 1/4 cup portions into a hot pan with 1/4 inch avocado oil. Press down with spatula and fry until underside is golden.
Flip and cook on the other side until golden, crispy and cooked through the middle.
Transfer finished latkes to paper towel lined baking tray.
Do not let latkes sit in the oily paper towels, they will get soggy. Move them to a wire rack on a baking sheet and keep in 200 degree oven until ready to serve.
Serve warm with your favorite toppings like applesauce or sour cream.
