Mix together almond flour, olive oil and maple syrup until a crumbly dough forms.
Press dough into the bottom of a parchment lined square baking pan. Bake in preheated 350 degree oven for 15 minutes.
Blend almond butter, dates, olive oil and maple syrup in a food processor.
Spread caramel onto the cookie layer and freeze for at least one hour.
Melt chocolate with a touch of olive oil and pour onto the cookie and caramel base.
Spread melted chocolate evenly and sprinkle with flakey sea salt. Chill for 10 minutes.
Cut into quarters and then slice each quarter into 4 long pieces.
