Gluten-free Stuffed Mushrooms

This easy recipe for gluten-free stuffed mushrooms will quickly become your go-to...because who doesn't like a delicious vegan appetizers that's low in calories and carbs?

Ingredients

Mushrooms, onions, spinach, cauliflower rice, parsley, garlic, pine nuts, herbs, nutritional yeast.

Par-bake mushroom caps

Remove mushroom stems, chop and set aside. Par-bake the caps at 350 for 10 minutes to soften.

Make "cheese"

Use a spice grinder to combine pine nuts, oregano, onion powder, garlic powder and nutritional yeast until crumbly, resembling parmesan cheese.

Make Filling

Heat heavy skillet. Saute onions and mushroom stems, then add garlic.

Add remaining ingredients

Turn off heat and add cauliflower rice, nut/spice mixture, spinach and parsley.  Mix well. 

Fill

Scoop filling into par-baked mushroom caps.

Bake

Bake for 15-20 minutes until mushrooms are tender and tops are golden. 

Serve warm

Serve stuffed mushrooms while they're still warm.
