Crispy Brussels Sprouts Latkes

 Gluten-free with Vegan Option

This recipe for Gluten-free Brussels sprouts latkes is a modern twist on traditional potato latkes. They're baked, not fried for a healthier crunch. Loaded with veggies and so delicious, nobody will miss the potatoes!

Ingredients

Shred

Shred onions and Brussels sprouts.  Use a food processor or a box grater.

Dry Ingredients

Place shredded veggies in large mixing bowl. Sprinkle in gluten-free ground oats, plus spices and mix well. 

Add binder

You can add whisked eggs or a mixture of chia/flax with water to bind the mixture together.

Prep for baking

Use a cookie scoop or spoon to portion out latke batter onto baking sheet. Brush with oil. 

Bake

Bake in preheated 450 oven for 12 minutes. Flip and then bake on other side for 10 minutes.

Crispy Baked Latkes

Latkes are done when crisp on both sides. 

Serve warm

Serve gluten-free latkes while still warm for the crispiest baked latkes. Add your favorite toppings.
