Thinly slice scallions, cabbage, red pepper and snow peas. Shred carrots.
Whisk together tahini, rice vinegar, tamari, maple syrup, garlic, crushed red pepper and ginger.
Boil noodles for 2 minutes less than package direction indicate. Rinse with cold water, transfer to bowl and toss with a splash of sesame oil.
Add carrots, snow peas, cabbage, scallions and red peppers to the large bowl with cooked noodles.
Start with half the tahini sauce. Pour over noodles and veggies.
Mix the noodles and veggies together until dressing is well incorporated. Pour more tahini sauce as needed. Garnish with toasted sesame seeds, crushed red pepper and chopped peanuts.
