Carrot Soup Recipe

This vegan carrot ginger soup recipe has just 8 simple ingredients and is easy to make. Dairy-free carrot soup is a delicious way to tackle inflammation, and build immunity.

Dice or Mince veggies

Saute veggies in broth

Saute onions, then add ginger, tuermeric and garlic. Add more broth if pan becomes dry. 

Add broth and veggies

Add diced carrots, parsnips and cauliflower. Cover with vegetable broth.

Puree

When veggies are tender, use an immersion blender and puree until smooth and creamy

Garnish

Garnish with fresh herbs

Serve

Serve warm with some crusty bread and a dollop of vegan sour cream.
