Place avocado, olive oil, eggs and honey into a medium dish with high sides. Use an immersion blender to puree until creamy.
Add cinnamon and ground flax and mix well.
Shred apples on the side of a box grater. Place in large bowl with raisins.
To the bowl with the apples, add cooked noodles plus avocado mixture and stir to combine.
Transfer the entire mixture to a 9x13 baking dish.
Bake in preheated 350 degree oven for 45 minutes.
Apple noodle kugel can be enjoyed warm or at room temperature.
