Slice 1/4" off the top of the peppers and set aside. Remove the seeds and core and then place in an oven safe dish in a way where they wont tip over. Then roast to soften them
Saute the onions and chopped peppers. Then begin adding the rest of the stuffing ingredients over a low heat
Remove peppers from oven, but leave it on. When peppers are cool enough to handle, spoon quinoa mixture evenly into peppers. Cook until peppers are soft and filing is piping hot.
Once the pepper are done cooking, take them out of the oven. Serve while still warm and enjoy!
