Molasses, flour, baking soda and powder, tahini, spices, chopped chocolate for dipping.

Combine flour, baking soda, baking powder, ginger, cinnamon, cloves and salt in a medium bowl..

In a small bowl, mix together the tahini, molasses, maple syrup and vanilla extract until well combined

Pour wet ingredients into dry and mix until everything is well incorporated.

Finely chop 1-oz. dark chocolate for dipping the tops of ginger cookies.

Make Cookies

Scoop 1 Tablespoon batter and roll into a ball. Drop into the chopped chocolate and place on a baking tray lined with parchment.

Flatten

Use the bottom of a cup to flatten cookies.

Bake in preheated 350 degree oven for 10 minutes. Cook on baking tray for 5 minutes and then transfer to a wire rack.
