Rinse, drain and add to small saucepan with 1 ½ cups water. Bring to a boil, reduce heat to a low simmer, cover and cook until water has been absorbed, about 15 minutes.
In a medium sized bowl, toss the oil and spices with the squash until evenly coated.
Spread on large rimmed baking sheet. Roast for 15 minutes. Flip and roast for another 10 minutes. Depending on how thick you’ve sliced the squash, it could be ready to flip in 10 minutes, so keep an eye on it.
