Cut cauliflower in half. Trim off leaves. Make super thin slices with a sharp knife or shred in food processor. Place in large bowl and sprinkle with salt and pepper.
Add olive oil to small bowl. Mince shallot, zest lime and garlic into bowl. Juice lime over bowl. Whisk together.
Chop cabbage, slice scallions, dice celery, chop parsley and dice dates.
Add all veggies to bowl with cauliflower.
Pour on half the dressing. Mix well. Taste. Add more dressing if desired. Mix thoroughly.
