INGREDIENTS

Cauliflower Red Cabbage Scallions Celery Pistachios Fresh Parsley Green Peas Medjool dates Lime Vinaigrette: olive oil lime garlic shallot

Prep the Cauliflower

Cut cauliflower in half. Trim off leaves. Make super thin slices with a sharp knife or shred in food processor. Place in large bowl and sprinkle with salt and pepper.

Make the Vinaigrette

Add olive oil to small bowl. Mince shallot, zest lime and garlic into bowl. Juice lime over bowl.  Whisk together.

Prep remaining ingredients. 

Chop cabbage, slice scallions, dice celery, chop parsley and dice dates.

Add all veggies to bowl with cauliflower.

Add all veggies.

Mix and dress. 

Pour on half the dressing.  Mix well.  Taste. Add more dressing if desired. Mix thoroughly.
