Ue a small saucepan to bring lemon juice, honey and almond milk to a gentle simmer.
Grind poppyseeds in a spice grinder or coffee grinder and add to the pan.
Add raisins to the pot and continue to cook for 5-8 minutes until thickened and jammy. Turn off heat and stir in vanilla and sea salt.
Cool mixture completely and store in an airtight container for up to 2 weeks. Use to fill your hamantaschen before baking.
