Jeweled Rice Recipe 

Vegan | Gluten-free

This EASY Jeweled Rice Recipe is just as tasty as  traditional Persian Jeweled Rice  but made in 30 minutes. Incredibly delicious vegan side dish sprinkled with fruits, nuts and veggies.


Prep rice for cooking


Place rinsed rice, carrots, garlic, orange peel, cinnamon stick and saffron into bowl of instant pot or regular pot.

Cook rice


Cover with water and cook until rice is tender and veggies are soft.

Caramelize Onions


Heat cast iron pan over medium-low heat and slowly saute onions until golden and caramelized.

Add spices and nuts


Once onions are caramelized, sprinkle in spices and slivered almonds and continue to cook until nuts are toasted and fragrant. 

Fluff rice


When rice is finished, fluff with a fork, making sure saffron threads and garlic are well distributed.



Layer ingredients on a platter beginning with rice and carrot mixture.  Then add caramelized onions and nuts. Garnish with scallions, raisins and pomegranate seeds. 

Or Mix 


Alternately, load everything into a bowl and mix well.  Serve warm or at room temperature. Or, make in advance and serve cold.
