Peel parsnips and carrots. Cut them into long-ish strips.
Halve oranges through the stem and then slice into half moons.
Place carrots, parsnips, onions and oranges in a bowl. Mix with olive oil, honey, salt and pepper.
Spread honey glazed vegetables onto a large rimmed baking sheet and roast in a preheated 425 degree oven for 35 minutes.
