1. Use the shredding disc of your food processor to prepare the zucchini. If you don’t have a processor, use the side of a box grater to shred the zucchini. Set aside in large bowl.
In the bowl of food processor or blender, add everything except the zucchini and the chocolate chunks. Blend until smooth.
To the large bowl with the zucchini, add the chocolate mixture and the chocolate chunks. Fold together gently.
Spoon into prepared muffin tins and top with additional chocolate if desired. Recipe will make 12 medium sized muffins. Bake for 20 minutes
