Core the apples using a knife, a grapefruit spoon or an apple corer. Dig out the seeds and woody center.
Combine oats, walnuts, ground flax and cinnamon in a spice grinder or small food processor.
Add maple syrup to ground oats/nut mixture and stir until well combined.
Stuff the filling into the cored apples.
Bake in preheated 350 degree oven for 45 minutes-1 hour, until apples are soft and you can easily stick fork into them.
Serve warm or at room temperature. Top with ice cream, if desired.
