Use a food processor or side of a box grater to shred zucchini.
Place banana, egg, dates, cacao powder, instant coffee and maple syrup into food processor and thoroughly combine.
Combine chocolate mixture with shredded zucchini and chocolate chips.
Scoop batter into lined muffin tins.
Bake in preheated 375 oven for 20 minutes.
Transfer to a wire rack and cool completely before transferring to an airtight container.
