Dairy-free Tomato Soup Recipe

This easy Dairy-free Tomato Soup Recipe is rich and delicious. A creamy tomato soup that’s vegan and gluten-free, ready in 30 minutes and made with wholesome pantry ingredients….yes, please!

Ingredients

Saute veggies

Use veggie broth to saute the onions and celery plus spices.

Garlic

Grate the garlic over the soup pot and then cook, stirring constantly, until fragrant. 

Tomatoes

Add whole tomatoes plus the juices. Cook for 5 minutes and then use a spoon to crush them against the side of pot.

Remaining Ingredients

Stir in chickpeas, veggie broth and chopped dates.  Simmer for 20 minutes until tomatoes are tender.

Puree

Use an immersion blender to puree the soup until thick and creamy.

Serve

Garnish with fresh basil, crunchy chickpea croutons and some red pepper flakes. Serve warm, at room temperature or even chilled.
