Grate the garlic over the soup pot and then cook, stirring constantly, until fragrant.

Stir in chickpeas, veggie broth and chopped dates. Simmer for 20 minutes until tomatoes are tender.

Garnish with fresh basil, crunchy chickpea croutons and some red pepper flakes. Serve warm, at room temperature or even chilled.
