Cauliflower Steaks with Chimichurri Sauce

Try this delicious Easy Cauliflower Steak Recipe with Chimichurri Sauce. Thick and meaty vegan steaks are roasted to perfection and topped with a zesty homemade chimichurri for a satisfying plant-based dinner.

Ingredients

Cauliflower, olive oil, salt and pepper.

Cut cauliflower

Cut bottom off cauliflower and remove leaves. Cut through core to halve and then cut those halves into halves again.

Prep for baking

Brush cut pieces of cauliflower with olive oil and sprinkle with salt and pepper.

Roast Cauliflower

Roast cauliflower in preheated 425 oven for 15 minutes. Flip and continue to roast for 10 minutes until golden brown.

Make Chimichurri

Add fresh parsley and oregano plus garlic cloves, salt and red pepper flakes to food processor and pulse until finely chopped.

Finish Chimichurri

Add olive oil and red wine vinegar to chopped herb mixture and mix well.

Garnish

Spoon chimichurri sauce onto roasted cauliflower steaks
