Use the side of a box grater or a food processor to grate the zucchini.
In a medium sized bowl, mix shredded zucchini with applesauce, honey and vanilla.
In a large bowl, combine flour, flax, cinnamon, baking powder, baking soda and salt, plus chocolate and nuts if desired.
Combine the wet with the dry ingredients and mix well, until everything is fully incorporated.
Pour zucchini bread batter into parchment lined loaf pan. Then bake in preheated 350 oven for 55 minutes.
Gently remove by holding onto parchment and transfer to wire rack to cool completely before slicing.
When cool, cut into thick slices and enjoy.
