Dinner on the table in no time!
Long weekends are the best….except for the reality that there are only 4 days with which to get 5 days work done, and often the fact that we are so busy enjoying the weekend’s festivities that regular food shop and prep can fall by the wayside. My 4th of July was no exception to any of that…..the perfect weather was a nice backdrop to barbeques, beach, boats and more than one spectacular fire works show! I hope your weekend was filled with friends, laughter and memory making too.
So, like many of you, I showed up Tuesday with the feeling that I was behind the eight ball and decided to give myself a break and feed my family something simple, yet nourishing. I served this over brown rice with a simple side salad……bam….dinner on the table in no time.
This recipe is on our regular menu rotation for so many reasons. Do you have recipes like that too? You know, the ones that you know will be liked by everyone because they are tasty, but not too complicated for the picky eaters in your midst……those recipes you like to make when guests come over because you can make the packets ahead of time and then get busy enjoying your company rather than puttering around in the kitchen……..recipes that always get an “ooh” and an “ah” because of their impressive presentation……recipes that don’t compromise on nutrition but are favorites anyhow, because they taste divine….and recipes you rely on when you’re pressed for time, recipes that offer simplicity in both the prep and the clean up……yeah, this is one of those. All of those things can be said about this salmon wrapped in parchment. You can never have to many recipes to pull out of your back pocket in a pinch.
Another really nice thing about this recipe is that you can customize it to suit everyone’s tastes. For example, my daughter doesn’t like lemon on her salmon, my son does. I like extra kale in my packet and my son prefers no kale. Easy peasy to accommodate special requests!!
I made these packets mid-day when I had a break in my schedule, left them in the fridge until I was ready to make dinner. I took them out about 30 minutes before putting them in the oven to come to room temp. I served the fish over brown rice with a simple side salad. Voila! A healthy dinner in no time, with minimal clean up…..and a chance for our family to reconnect and share stories of the weekend at a leisurely pace.
