In our house, we eat a lot of salad. I make it pretty easy for everyone by having chopped up greens and veggies in a bowl ready to go…….oh, and having glass jars with dressing already made and available. That’s the key, really…..the dressing. I think everyone would eat more salad if they had a dressing that was tasty and ready made. Unfortunately, store bought dressing is always loaded with preservatives, and other additives that aren’t so healthy, making the salad a less than desirable choice for those watching their weight and/or their health.
I can whip up a tasty dressing in a flash, but I often take a bit of time once a week to make a few jars of dressing. It’s part of my meal prep for the week. I know that having tasty dressing options available makes all the difference in the choices I make…..especially when I’m pressed for time or unusually hungry.
When I’m whipping together dinner at the last minute, trying to prep a “to go” lunch, or even throwing together some left over roasted veggies in a bowl atop of greens, having a super yummy dressing ready to go is a must!
This dressing gets the bulk of its flavor from roasted garlic. You can get the recipe here, and I love the fact that you can make it in advance and leave it in the fridge until you are ready to make the dressing. I will often throw in a few heads of garlic to roast any time I know the oven is going to be on already…..making it super easy to pull out and make this dressing. Alternately, throw the garlic into the oven to roast and while you are prepping your roasted veggies and chopping your greens for the week, the garlic will be done and it will be time to make the dressing. Yum!
